Marine functional foods

The global market in marine functional foods is worth approximately $74 billion. Our project is to help Ireland become a major player in this market.

We will do this by increasing our ability to identify new marine ingredients and products.

Our research will explore marine life for sources of food and ingredients. We will concentrate on three primary areas:

1. Using waste from fish processing

2. Using under-used fish and seaweed sustainably
3. Developing value-added products

We will also create links between researchers and the food and pharmaceutical industries.
