Biography

Profile: Associate Prof Eileen Gibney (BSc, PhD, MSc) has worked in the area of human nutrition since 1997. Graduating with a degree in human nutrition from the University of Ulster at Coleraine, she then obtained her PhD from the Dunn Nutrition Unit, University of Cambridge in 2001. She went on to complete an MSc in Molecular Medicine (TCD) in 2003. Eileen held post-doctoral positions at the University of Newcastle and Trinity College Dublin, before joining UCD as Lecturer in Nutrition in 2005. Her current research interests lie in the area of personalised nutrition, where she develops strategies for personalised dietary and lifestyle feedback based on dietary, phenotypic and genetic information of the individual. Her work is focused on the interface of molecular and public health nutrition, taking basic knowledge of genetic and phenotypic variation in response to dietary intervention and developing technologies to apply such knowledge into successful public health nutrition and lifestyle strategies. She has a significant interest in the development of novel online technologies to accurately capture dietary intake. She has successfully obtained over 2.3M Euro direct funding research, leading several projects and collaborating on both national and European grants, such as the food4me project, a 9M Euro FP7 project involving an international consortium of researchers researching aspects of personalised nutrition. She is a key member of the UCD Institute of Food and Health and a member of the academic staff for BSc Human Nutrition. She is Associate Dean of Teaching and Learning within the School of Agriculture and Food Science. In addition Eileen is a Director of the Irish Association for Clinical Nutrition and Metabolism (IrSPEN) and sits on the Public Health Nutrition sub Committee in the Food Safety Authority of Ireland.

Research

Research Interests

Profile: Associate Prof Eileen Gibney (BSc, PhD, MSc) has worked in the area of human nutrition since 1997. Graduating with a degree in human nutrition from the University of Ulster at Coleraine, she then obtained her PhD from the Dunn Nutrition Unit, University of Cambridge in 2001. She went on to complete an MSc in Molecular Medicine (TCD) in 2003. Eileen held post-doctoral positions at the University of Newcastle and Trinity College Dublin, before joining UCD as Lecturer in Nutrition in 2005. Her current research interests lie in the area of personalised nutrition, where she develops strategies for personalised dietary and lifestyle feedback based on dietary, phenotypic and genetic information of the individual. Her work is focused on the interface of molecular and public health nutrition, taking basic knowledge of genetic and phenotypic variation in response to dietary intervention and developing technologies to apply such knowledge into successful public health nutrition and lifestyle strategies. She has a significant interest in the development of novel online technologies to accurately capture dietary intake. She has successfully obtained over 2.3M Euro direct funding research, leading several projects and collaborating on both national and European grants, such as the food4me project, a 9M Euro FP7 project involving an international consortium of researchers researching aspects of personalised nutrition. She is a key member of the UCD Institute of Food and Health and a member of the academic staff for BSc Human Nutrition. She is Associate Dean of Teaching and Learning within the School of Agriculture and Food Science. In addition Eileen is a Director of the Irish Association for Clinical Nutrition and Metabolism (IrSPEN) and sits on the Public Health Nutrition sub Committee in the Food Safety Authority of Ireland.

Teaching

Teaching Philosophy

I am a passionate teacher, inspired by enthusiastic and communicative teachers. I hope that my enthusiasm for my subject translates to my students enthusiasm to learn. I teach students to be independent, educated thinkers with understanding of theoretical principles supported by current practice and knowledge of relevance to society.
 

Enhancement of Teaching

As a lecturer I ensure that I use a variety of teaching styles to meet the learning needs of all students including lecturing (auditory), with supported slides (visual) and in-class discussions (active learners), supported with additional reading material (reflective learners). Student feedback, both formal and informal, informs my content and teaching style. Overall satisfaction in my modules is 4.2/5 (84%). However, whilst student feedback is important, as teachers we learn from peer reflection and I have undergone internal and external peer review. I am completing the Dip in University Teaching and utilise the skills developed to enhance my personal teaching. Within my role as Associate Dean for Teaching and Learning I am Project Champion for the Schools Curriculum Review and Enhancement Process. As part of the University's Strategic Plan, I was a member of the Elective Review Group and currently Chair the Elective Implementation Group within the University.

Review and Enhancement of Curriculum

I was the lead academic in the development of the BSc Human Nutrition programme, a strategically important programme in UCD devising the programme content and structure to meet two requirements. Firstly a personal requirement to ensure that content is evidence based and supported by recent peer reviewed publications and secondly that it meets the guidelines and requirements set for accreditation by the Association for Nutrition (http://www.associationfornutrition.org/). In doing so, our graduating students meet the graduate attributes of Nutrition Society and also UCD, who aim to develop academically excellent, intellectually flexible & globally engaged students. Whilst developing the content of the course, I set learning outcomes at both module and individual lecture level, and designed the content and assessment of the module accordingly. The total assessment strategy across the programme was examined to both balance and mix assessment types and strategies. e.g ensuring a balance of essay style, MCQ/SAQ, presentations and reports across each stage, with a mix of individual and group work, where appropriate. In designing the course to teach the key attributes of our desired students, it became clear that a structured and extended professional work experience was needed, similar to existing programmes within the UK. As such derogation was sought to establish a 60 credit, 10 month long placement, where students spend the full Stage 3 working in one placement in 3 main areas: research, health promotion or industry (recent placements include Uni of Nottinghman, Uni of Reading, Unilever, Danone, FSAI and Safefood). During this placement, students implement their knowledge from stages 1 and 2, and whilst using this knowledge in their roles within these institutions, obtain additional lifelong skills including communication, problem solving and professionalism. This placement year, ensures our graduates have skills beyond those achieved within a university setting, meeting the needs of the graduate market.

Developing as a Teacher

Since starting in UCD, I have followed a Personal Development Plan, which I designed in consultation with a career coach. This career development tool structured my personal and professional development in a targeted and measured way. I defined my goals, identifying milestones to realise these goals, which included student feedback, informal learning targets, independent review and reflective self-assessment. In meeting these goals I ensure I keep up to date in teaching technologies available, including Articulate, Collaborate and aspects of social media including twitter and forums using these within my undergraduate modules (e.g. Food Diet and Health, Clinical Nutrition). Additionally I attend Teaching and Learning workshops in UCD including Blackboard Tutorials; MCQ development; Introduction to the use of Blogs, Wikis, Discussion Boards, Collaborate, Journals, Groups in Blackboard As programme option co-ordinator of BSc Human Nutrition I submitted applications to the BRC for additional staff as the programme developed obtaining 3 additional posts. I mentored and assisted these new staff members in their developing teaching careers, explaining the ethos and outline of the course, planning of learning outcomes and structuring of modules as well as ensuring they had an understanding of the University regulations IT systems used within UCD teaching

Innovation & Leadership

I developed the BSc Human Nutrition and am Programme Option Co-ordinator and Head of Subject. I have led innovation and change by; ensuring continuity and structure of Nutrition related modules within this and other related programmes, overhauling nutrition content of existing programmes where appropriate. I have led in the use of teaching technologies taking the lead in the development of the MSc Food and Health, an online course, where technology will be key to delivery of this programme
