Biography

Colm O'Donnell is Full Professor of Biosystems & Food Engineering and Head of the UCD School of Biosystems & Food Engineering. He previously worked in the dairy processing industry and was an EU Comett Research Fellow at the Institut National de Recherche Agronomique (INRA) in Paris. He has co-ordinated UCD's involvement in numerous internationally funded Biosystems & Food Engineering research and education projects including EU Tempus,  Lifelong Learning, Comett, Marie Curie, Marie Skłodowska-Curie and Alfa programmes with industry and academic partners in Europe, Asia, Australia and America. He was the UCD College of Engineering & Architecture Vice-Principal for Teaching & Learning from 2011 to 2014. 

He leads a research team working on a range of Process Analytical Technology and Non Thermal Processing projects funded by EU Framework, Irish Research Council, Food Institutional Research Measure, Enterprise Ireland and industry. His research outputs include over 170 peer reviewed journal papers and two patents. He has a strong track record of mentoring members of his research team for prestigious Marie Curie, Marie Skłodowska-Curie and European Research Council fellowships and awards in FP7/H2020 framework programmes. He was designated as a Highly Cited Researcher by Thomson Reuters in 2014, 2016 and 2017 based on his rankings within the world's top 1% highly cited researchers.

He is Head of the Food Quality and Processing Pillar in the UCD Institute of Food & Health. He is Editor of the International Journal of Food Properties and Associate Editor of Transactions of the American Society of Agricultural & Biological Engineers. He is a member of the Editorial board of Food Engineering Reviews (Springer) and the Encyclopedia of Agricultural, Food and Biological Engineering (Taylor & Francis). He is a member of the Food Processing Technical Committee of the American Society of Agricultural & Biological Engineers (ASABE) and Chair of the International Federation for Process Analysis & Control (IFPAC) Dairy Processing Technical Committee. He is a Principal Investigator and Head of Pillar IV (Process Quality and Safety by Design) in the 25 million euro Enterprise Ireland/industry funded Dairy Processing Technology Centre.

Method of improving cheese quality. US Patent number 7880881. 

Light beam from an incident light source impinges onto a surface of the milk batch, and light backscatter is optically detected during a coagulation process and correlated to an optimum cutting time for the milk coagulum. US Patent number 7892584.
