The #UCDFOOD team was led by Dr Aifric O’Sullivan, UCD School of Agriculture and Food Science, in connection with Dr. Celine Murrin and Yvonne Lenighan, UCD School of Public Health, Physiotherapy and Sports Science, Odhran Lawlor, UCD Hospitality Services Manager, and Brian Mullins, Director of Health Promotion. A great team of staff and students worked very hard to manage the event. The catering companies on campus played a huge role too by hosting a variety of initiatives during the week.
The #UCDFOOD project is one of this year’s SPARC (Supporting Partnerships And Realising Change) projects.
The specific aim of #UCDFOOD this year was to initiate a Healthy Eating Week in UCD with goal of developing a sustainable campus-wide awareness of healthy eating. With the support of the catering manager and companies we introduced “healthy options” on the menus in Pi and the Main Restaurant and provided nutritional information so that staff and students could make informed choices.
We also had an information board and 'meet the nutritionist' stations in the Science Hub and the Main Restaurant, along with a series of lunchtime talks. We established social media accounts on facebook (UCD FOOD), twitter, instagram and snapchat (ucd_food). We also provided people with a 7 Day Meal Guide (PDF). Our ultimate goal is to create a healthy eating culture across campus which will tie in with the University strategic plan for “Healthy UCD”.
