Food Tech, Safety and Integrity

UCD is developing new technologies to ensure the safety of the food chain and the protection of public health, in areas including whole genome sequencing, antimicrobial resistance genotypes from farm-to-fork, and advanced modelling to investigate the impact of climate change. Our researchers are also driving innovative processing technology and food structure design to improve food quality and sensory appeal.

Addressing critical gaps in our knowledge of food safety

  • UCD Spectral Imaging Research Group

Spectral imaging combines spatial and spectral information to enhance our understanding of the world around us. The multidisciplinary UCD Spectral Imaging Research Group is breaking new ground in the application of Spectral imaging to investigate interactions between biomaterials and their surroundings and identification of bacterial colonies of a variety of surfaces. Through their HyperMicroMacro project, the group are providing new insights on the persistence of food related microorganisms and their behaviour on foods and other surfaces.

The UCD Institute of Food and Health brings together 60 Principal Investigators and their teams from across the university for their multidisciplinary expertise in research areas such as Food Safety, Food Sustainability, Primary Production Systems, Innovative Processing and Food Quality, and Nutrition and Health.
Taking a holistic approach, these world-class researchers are working together to promote sustainable diet-related health and wellness, deliver cutting-edge research to support national and international policy and societal health and create innovative platforms that enable industry to be more competitive.
